There are many questions about honey and bees, and these are just some simple answers to the questions we get asked the most..

My honey in the cupboard has crystalised, has it gone off? 

The simple answer is no! 

The honeys 'structure' can alter due to temperature changes, being contaminated with other products (like butter from a knife), or simply because our honey is very naturally processed from hive to jar with no pasteurising or heavy heat treatment. 

Honey that has a higher glucose content tends to crystalise more than honey with a lower glucose content.

Bulk honey

My honey is set - why can I not place it straight into a jar? 

Bulk honey is unprocessed honey that has been through a settling tank straight into buckets. It has not been fine filtered for jarring, nor has it been warmed. 

Prior to jarring we recommend you warm it back to hive temperature and pour through a fine filter. 

All our bulk honey (Summer clears and Spring Soft sets) will naturally set / crystallise over time as they have not been heat treated. 

Has honey got sugar in it?

Yes, but not the white powdery sugar you are thinking of.

Honey is made up of a natural composition of glucose and fructose, and all it is is nectar collected by bees from plants and trees.

My Chilli honey has crystalised - what should I do?

 

We recommend placing the bottle in a jug or bowl of hot water, the product will then liquify again. 

Chilli honey has a tendency to crystalise if you store it in a cold environment.

Always keep it in a cupboard at room temperature.
