Butternut Squash Green Thai Curry
Green Thai curry is one of my favourite simple dishes to whip up when I have friends over. You can adapt this how you want by swapping in different veggies, but I find it works best with 3 - 4 veggies max. Vegan Salad
I timed myself to make this one and it took only 15minutes, so it is a great one if you are in a rush and have a load of delicious vege in the fridge. Ingredients > Curly Kale > 1/2 Avocado > Mushrooms > Tomatoes > Juice of 1/2 Lime > 1 leek > 1 Tin of 400g Cannelini Beans (Or red kidney, haricot, butter bean, chick peas) > Corriander > Salt and Pepper to season Method: 1.
