Healthy Honey: Granola

Since cutting refined sugar out of my diet - adapting this Granola recipe has been a God send!

Most cereals, muesli's and granolas will have refined sugars in and bad oils which are not very good for you. I make a batch of this Granola once a week to take me through the whole week - and its so yummy I am stoked about getting up in the morning to eat it!

Ingredients...

Large mixing bowl of organic gluten free porridge oats

1/4 cup of coconut oil

4 tablespoons of honey

1 tablespoon of Cinnamon

2 drops of vanilla essence

Large handful of Almonds

Large handful of hazelnuts

2 tablespoons of dessicated coconut

2 tablespoons of chia seeds

Method:

Mix in the bowl the oats and cinnamon until all the oats are a golden colour.

Melt in a saucepan the coconut oil, mix in the honey and vanilla essence to the liquid mixture.

Pour the liquid mixture over the oats and mix well until they are all covered.

Spread out the oats onto a baking tray and bake in the oven for 15 mins at 150' (fan oven)

Take out of the oven, give the oats a stir, and pour over all your nuts and dessicated coconut.

Put back in the oven for 5 mins until nuts are toasted.

Take out, leave to cool, stir in the chia seeds and pop in a jar for the week!

ENJOY YOUR BREKKIE!

I tend to have this granola in the morning with chopped strawberries, blueberries and banana with coconut milk, almond milk or natural yoghurt.
